Having made tons of progress on the growing side, I found that for my style we have to pick Viognier earlier than others, otherwise we have too much alcohol and not enough freshness in the wine. I also found it best to use barrels that had been used previously for the Chardonnay otherwise we had too much oak influence. Before I knew it, I was more than 10 years into the project before we were ready for our first ever varietal estate Viognier!
